This marinade was created as a result of a chat at our stall with one of the visitors at the Northern Vegan Festival in Manchester. We were brainstorming marinade ideas for tofu and between us came up with a Sweet Ginger Marinade. As soon as we got back from the festival we started experimenting and couple of failures and near misses later we now think we’ve nailed it, mainly by keeping it simple. Thanks and joint credits for this go to the unknown but lovely festival goer and tofu enthusiast in Manchester.
1 block tofu, well pressed
½ cup raw, grated ginger
4 cloves of garlic
3 tbsp maple syrup (or agave syrup if you prefer)
3 tbsp hot water
1 tbsp sesame oil
1 tbsp apple cider vinegar
1 pinch of salt (be generous – it brings out the flavour)
Freshly ground black pepper
Grate the ginger and garlic into a flat bottomed dish. Add the maple syrup, vinegar, oil and hot (just boiled) water and give it a good stir. Add the salt and pepper and stir to combine. Cube the well pressed tofu and add to the marinade. Leave the tofu marinating for an hour or more and then either bake it in the marinade in a hot oven (180 deg C) for 20 minutes or fry in a little oil until the tofu is golden brown and crispy.
