We developed the Smoky Sweet Tofu Marinade recipe to take to Vegan Fairs and Festivals to give out as samples. We wanted to best show how tofu can absorb the flavours of a marinade when it is well pressed. This marinade served better than any to dispel the myth that tofu is bland and tasteless. It proved so popular and we were so often asked for the ingredients that we started to make it to sell as a complimentary product on the stall. And it always sold out. The marinade combines the complex flavours of liquid smoke and tamari with a hint of spice from the ground pepper and sumac and we use it as a bacon replacement for everything from sandwich fillers to Carbonara.
1 cup tamari
1/2 cup maple syrup
1 tbsp liquid smoke
1 tbsp onion powder
1/2 tbsp garlic powder
1/2 tbsp black pepper
1 tsp sumac
1/2 tsp smoked paprika
Mix all of the dry ingredients together in a mixing bowl. Combine the wet ingredients in a measuring jug. Pour a bit of the wet mixture into the dry mixture and stir to create a roux. Then, slowly add the rest of the wet mixture stiring continously to avoid getting lumps.
Add the marinade to well pressed tofu that is cut into strips or cubes for at least an hour or overnight in the fridge if possible. The tofu can then be either baked or fried.
To achieve a jerky type effect leave to bake on a low heat for 30-45 minutes.
