Tofu Feta

These yummy bites of happiness will zing up your meal, whether its a warm pasta dish, salad or Buddha Bowl.  These joyful cubes of flavour are an excellent feta replacement. Store them in the fridge for up to a week in a good quality glass jar with a sealed lid and shake before serving. The marinade will continue to infuse into the tofu and pepper.


1 block tofu (400g / 14oz) – well-pressed and cut into large-ish cubes

1/3 cup lemon juice

1/3 cup apple cider vinegar

2 tbsp nutritional yeast

1 tbsp dried oregano

2 tbsp white miso

½ tsp salt

1 tsp garlic granules

½ tsp chilli flakes

1 tbsp extra virgin olive oil

Freshly ground black pepper


1/2 red pepper, chopped into small pieces


Put all the marinade ingredients into your food blender or mixer and whizz together.

Pour the marinade over your tofu cubes in a bowl and mix carefully, ensuring the tofu is completely covered in the liquid.

Pour both the tofu and the marinade into a glass jar and add raw red pepper pieces.

Leave the jar in the fridge to marinade overnight and enjoy.
