INGREDIENTS
1 block tofu (400g / 14oz) – well-pressed and cut into large-ish cubes
1/3 cup lemon juice
1/3 cup apple cider vinegar
2 tbsp nutritional yeast
1 tbsp dried oregano
2 tbsp white miso
½ tsp salt
1 tsp garlic granules
½ tsp chilli flakes
1 tbsp extra virgin olive oil
Freshly ground black pepper
Plus:
1/2 red pepper, chopped into small pieces
METHOD
Put all the marinade ingredients into your food blender or mixer and whizz together.
Pour the marinade over your tofu cubes in a bowl and mix carefully, ensuring the tofu is completely covered in the liquid.
Pour both the tofu and the marinade into a glass jar and add raw red pepper pieces.
Leave the jar in the fridge to marinade overnight and enjoy.
